Apple pies were quite popular in Europe,especially in England,well before they became an American popularity of the apple pie in the United States coincided with the country's growth into the world's largest apple-producing old fashioned apple pie is reminiscent of classic versions baked over several generations in American kitchens.

用料  

面团/ Dough
低筋面粉/Low-gluten flour 200g
高筋面粉/High-gluten flour 50g
黄油/Butter 100g
馅料/Stuffing
苹果/Apple 1个
白砂糖/White sugar 30g
黄油/Butter 30g
淀粉/Starch 10g
装饰/Decoration
蛋黄/Yolk 1只

  1. Prepare the high-gluten flour,low-gluten flour and butter,and prepare the dough.
    (*The main function of high-gluten flour is to increase the toughness of the dough and provide flavor,which can be added as appropriate.)
    准备好所需的高筋面粉、低筋面粉与黄油,准备制作面团。
    (*高筋面粉的主要作用是为面皮增加韧性和提供风味,可以酌情添加。)

  2. Put the ingredients in a bowl,add butter and appropriate amount of salt,and mix careful not to apply too much force to prevent ribbing.
    将原料放入碗中,加入黄油与适量盐,拌匀。注意不要太用力,防止起筋。

  3. Add an appropriate amount of ice water,knead it into a ball,and put it in the refrigerator to freeze for 20 minutes.
    再加入适量冰水,将其搓揉成团后,放入冰箱冷冻20分钟。

  4. Fold the dough repeatedly to make the pastry richer.
    反复折叠面皮,使酥皮口感更丰富。

  5. Freeze again and repeat the above steps twice.
    (*This will make the dough more crispy and delicious,but if you want to save time,you can simplify it properly!)
    再次冷冻,重复上述步骤两次。
    (*这样能使面皮更加酥脆可口,但如果想节省时间也可以适当简化喔!)

  6. Wash, peel and cut apples into small cubes.
    将苹果洗净、削皮并切成小丁备用。

  7. Heat the melted butter in a pan,add diced apples and stir fry.
    在锅中加热融化黄油,放入苹果丁,翻炒。

  8. After the diced apple changes color, add starch solution and white sugar, continue to stir fry, and then out of the pan.
    待苹果丁变色后,加入淀粉溶液和白砂糖,继续翻炒,然后出锅。
