Raspberry Mousse Cake 树莓慕斯的做法
巧克力蛋糕层Chocolate cake layer:
准备食材
Prepare the ingredient
烤箱预热180度
Preheat the oven to 180 degrees蛋清蛋黄分离 将蛋清放入无油无水的容器中
Separate the yolk from the egg white. Place the egg whites in an oil-free and water-free container向蛋清中分三次加入白砂糖 用打蛋器打发至干性发泡(提起打蛋器可以拉出挺直的角)
Add the granulated sugar to the egg whites in three times and beat with a whisk until dry peaks form (Lift the whisk and can pull out the straight corners)打发好的蛋清分三次加入到蛋黄中 搅拌均匀
Whisk the beaten egg whites into the yolks in three separate batches. Stir well加入过筛厚的低筋面粉 搅拌均匀
Add in the sifted low gluten flour and stir well加入过筛后的可可粉 搅拌均匀
Add in the sifted cocoa powder and stir well倒入模具中(约1cm厚)放入预热好的烤箱中 180度 8分钟
(上述的量大概用6寸的模具)
Pour into the mould(about 1cm thick) and place in the preheated oven at 180℃ for 8 minutes
(About 6 inches of mold is used for the above quantity)将烤好的巧克力面包层放入慕斯模具中(要塞满哦)放置一边备用
Place the chaocolate bread layer into a mousse mold (fill well) and set aside树莓慕斯层Raspberry mousse layer:
准备食材
Prepare the ingredient将树莓捣碎
Mash the raspberries将白砂糖倒入树莓酱中 搅拌均匀
Add the sugar to the raspberry sauce and stir well吉利丁片放入冷水中泡软
Soak gelatine tablets in cold water to soften将树莓酱放入微波炉加热约30秒 拿出后加入吉利丁片 搅拌均匀
Microwave the raspberry sauce for about 30 seconds. Remove and add in the gelatine. Stir well将淡奶油打发至有纹路
Whip the light cream until it is textured将淡奶油加入树莓酱中 搅拌均匀
Add the light cream to the raspberry sauce and stir well将树莓慕斯糊倒入铺好面包的慕斯模具中 抹平 放入冰箱冷藏备用
Pour the raspberry mousse paste into the bread-lined mousse molds and flatten. Refrigerate巧克力慕斯层Chocolate mousse layer:

Prepare the ingredient
将巧克力切成碎片
Cut the chocolate into pieces.
吉利丁片放入冷水中泡软
Soak gelatine tablets in cold water to soften将1/2白砂糖加入牛奶中 剩余白砂糖加入蛋黄中 分别搅拌均匀
Add 1/2 of the sugar to the milk and the rest of the sugar to the egg yolks. Stir well小火加热牛奶至微微沸腾
Heat the milk over a low heat until it comes to a simmer将一半牛奶倒入蛋黄液中 搅拌均匀
Pour half of the milk into the egg yolk mixture and stir well将牛奶蛋黄液倒回奶锅里
Pour the milk yolk mixture back into the milk pan小火不断加热搅拌 直到其变得微微粘稠 离火
Keep the heat low, stirring constantly until it becomes slightly thick. And then leave the heat加入泡软的吉利丁片 搅拌均匀
Add in softened gelatine tablets and stir well将其倒入巧克力碎中 搅拌使巧克力完全融化 搅拌均匀
Pour it into the chocolate chips and stir until the chocolate has melted. Stir well将淡奶油打发至有纹路
Whip the light cream until it is textured将淡奶油加入巧克力酱中 搅拌均匀
Add the whipped cream to the chocolate sauce and stir well将巧克力慕斯糊倒入慕斯模具中 抹平 放入冰箱冷藏备用
Pour the chocolate mousse paste into the mousse mould and flatten. Refrigerate树莓镜面Raspberry mirror:

Prepare the ingredient
将树莓捣碎
Mash the raspberries
吉利丁片放入冷水中泡软
Soak gelatine tablets in cold water to soften
将泡软的吉利丁片隔水融化 倒入树莓泥中 搅拌均匀
Melt the soaked gelatine and pour it into the raspberry puree. Stir well用细筛过滤树莓酱
Sift the raspberry sauce through a fine sieve淋在慕斯上 抹平
放入冰箱冷藏至3小时以上
Pour over mousse and smooth
Refrigerate for more than 3 hours从冰箱中拿出 脱模
Take it out of the fridge. Mold release摆盘

小贴士
一定要将蛋清放入无油无水的容器中哦 否则无法打发Be sure to put the egg white in an oil-free container or it won't beat
