用料  

olive oil 3 tablespoons
chopped onion 1
crushed garlic 2 cloves
cubed potato 1
small cubed carrot 2
large cubed zucchini 1
chopped white cabbage 1/4
vegetable stock 700ml
chopped can tomato 2*400g
pasta shells 75g
salt and pepper
grated Parmesan 4 tablespoons
pesto香蒜 4 tablespoons

  1. Place oil in a large pan, add onion, garlic, potato, carrots, zucchini and cabbage. Cook for 5 minutes until softened.

  2. Add stock and tomatoes and bring to the boil. Reduce heat and simmer for 20 minutes. Add the pasta shells and seasoning. Cook for a further 10 minutes., until pasta is al dente. Divided soup between bowls and top each serving with a tablespoon of Parmesan and pesto.
