instant pot lamb pilaf的做法步骤图

too much rice, next time try 2.5 cups or 2 cups

用料  

frozen lamb shoulder (w/ bone) 2 lbs
rice 3 cups
onion, medium 1
carrots 4
raisin 0.4 cup
shaoxing 2.8 tbsp
cumin 2+1/4 tsp

instant pot lamb pilaf的做法  

  1. prep:
    - soak rice
    - cut onion and carrots into sticks
    - have couple ginger slices ready

  2. blanch lamb shoulder:
    start w/ cold water
    have several slices of ginger
    After boil, stay in pot for 3 mins

    rinse w/ hot water thoroughly for 3 times

  3. turn on saute, add oil till it's hot

    add lamb to brown them and cook off the fat a bit

    set aside lamb

  4. add onion to saute till translucent

    add carrots and 2.25 tsp cumin to saute till carrots are fragrant

  5. add lamb back in with 3 tbsp shao-xing and mix well

    add hot water and salt

    turn off saute

  6. add soaked rice; try to flatten the top

    add more hot water till it's almost at the surface of the rice layer

  7. sprinkle 0.4 cup raisins on top

  8. manual: high pressure for 30 mins

  9. natural release for 15 mins

  10. switch the lid to venting

    mix well before serve
